EthiopiaWelcome to authentic Ethiopian dining. Located in East Africa (commonly known as the Horn of Africa), Ethiopia has an amazing geographic diversity. The desert of the Denakil, which is 100 meters (328 ft) below sea level, is the lowest place on the planet and home of the 3.5 Million years old fossil “Luci”. On the other hand, the enormous highland much of which is above 2500 meters (8200 ft) has mountain peaks over 4600 meters (15,000 ft). This geographic diversity has led to the display of unique species of animals and plants, with many of the plants playing a significant
role in Ethiopian cooking.

NyalaWe named our cuisine “Nyala” (pronounced “n’YAH-la”) after the famous wild animal the Mountain Nyala. The Mountain Nyala is a kudu-like antelope that only and naturally exists in the southern highlands of Ethiopia. It has an average body length of 1.8-2.5 meters (6-8 ft) and weighs about 150-300 kilograms (350-600 lbs). It is the last mammal species in the world to be scientifically classified and is now considered an endangered species.
